250 Gr. Sugar
250 Gr. Butter
150 Gr. Chocolate Couverture
220 Gr. All Purpose Flour
50 Gr. Potato Flour
4-5 Eggs
� tsp Yeast Powder

How To Make Chef�s Own Black Forest Cake |
Procedure how to make Chef�s Own Black Forest Cake :
- melt the chocolate and the butter, add sugar and whip until smooth
- add all Eggs slowly. Once the product is whipped add Flour , Potato Flour, Cocoa and Yeast Powder ( all well sifted )
- Pour into the proper containers (greased and dusted with flour) and bake at a Temperature of approx. 160C for 20 � 30 minutes.
- Next day cut the sponge horizontally in layers of about 1cm thickness .
- soak each layer with Kirschwasser and spread with red Currant Jelly
- Through a piping bag apply the Whipped Cream and Sour Cherries onto each Layer except the top one as shown at the Demonstration.
- decorate the Cake with Whipped Cream all around and garnish with shaved Chocolate and Cherries as shown at the Demonstration.
